Ingredients
- 1 1/2 litres of water
- 1 onion
- 1 carrot
- 2 celery stalks
- 150gms yellow split peas (soaked overnight in water, then drained)
- 2 chopped spinach balls
- 440 gm tin 4 bean mix
- 400 gm tin tomato soup
- 2 teaspoons dried oregano
- 1 teaspoon dried basil
- ¼ pkt ABC pasta
Method
- In processor chop roughly the onion, carrots, celery, zucchini
- Rinse peas that have been soaked overnight, until water runs clear
- Place a large pot on to boil the 6 litres of water
- Slow boil for half an hour add vegetable mix and slow boil for another 30 mins
- Add the pasta, tomato soup , herbs, 4 bean mix and stir so doesn’t stick to bottom
- Once the pasta is soft then season with salt and pepper
