Minestrone Soup

Ingredients

  • 1 1/2 litres of water
  • 1 onion
  • 1 carrot
  • 2 celery stalks
  • 150gms  yellow split peas (soaked overnight in water, then drained)
  • 2 chopped spinach balls
  • 440 gm tin 4 bean mix
  • 400 gm tin tomato soup
  • 2 teaspoons dried oregano
  • 1 teaspoon dried basil
  • ¼  pkt ABC pasta

Method

  1. In processor chop roughly the onion, carrots, celery, zucchini
  2. Rinse peas that have been soaked overnight, until water runs clear
  3. Place a large pot on to boil the 6 litres of water
  4. Slow boil for half an hour add vegetable mix and slow boil for another 30 mins
  5. Add the pasta, tomato soup , herbs, 4 bean mix and stir so doesn’t stick to bottom
  6. Once the pasta is soft then season with salt and pepper
